Ingredients

  • 3 ripe bananas
  • 3 cups rolled oats
  • 2 ½ cups milk
  • ½ cup chocolate chips
  • 3 tbsp chia seeds
  • 2 large eggs
  • 1 tbsp instant coffee
  • ¼ tsp salt
  • 2 cups vanilla yogurt
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Preheat the oven to 350°F (176°C) and lightly grease a 9×13 inch casserole dish.
  2. In the prepared dish, add the 3 ripe bananas and mash them into a mostly smooth paste with a few small lumps remaining.
  3. Stir in the rolled oats, milk, chocolate chips, chia seeds, eggs, instant coffee, and salt. Mix well until fully combined and the eggs are incorporated.
  4. Bake for 25 minutes, or until the liquid is absorbed and the center is set.
  5. Let it cool slightly before serving. You can top the entire dish with vanilla yogurt and cocoa powder, or add them to individual servings if not serving immediately.
