Ingredients

  • two 8-ounce filet mignon steaks about 2 inches thick
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup blue cheese crumbles
  • 2 tablespoons heavy cream
  • 1 tablespoon butter melted
  • 4 tablespoons butter for sizzling finish
  • 1 tablespoon fresh parsley finely chopped

Instructions

  1. Preheat oven broiler to high and set the oven rack 6 inches from the heat source.
  2. Rub each filet with olive oil.
  3. Season each filet with kosher salt and black pepper generously.
  4. Heat a heavy ovenproof skillet over high heat until very hot.
  5. Sear each filet for 2 minutes per side until a deep golden crust forms.
  6. In a small bowl, mix blue cheese crumbles, heavy cream, and melted butter until smooth.
  7. Generously top each seared filet with the blue cheese mixture.
  8. Transfer the skillet to the oven and broil until the cheese bubbles and lightly browns, about 2 to 3 minutes, monitoring closely.
  9. Meanwhile, melt the remaining butter in a small saucepan until sizzling hot.
  10. Remove the steaks from the oven and drizzle them with the hot butter, then sprinkle with chopped parsley.
  11. Allow the steaks to rest for 5 minutes before serving.
