  • 1 teaspoon pure vanilla extract or vanilla bean paste
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1/3 cup graham cracker crumbs
  • 8 egg roll wrappers or large spring roll pastry wrappers
  • 2 tablespoons water for sealing
  • vegetable oil for frying
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Combine diced peaches, unsalted butter, light brown sugar, granulated sugar, lemon juice, vanilla extract, ground cinnamon, and nutmeg in a medium saucepan.
  2. Cook over medium heat for 4 to 5 minutes while stirring occasionally, until the peaches soften.
  3. Mix cornstarch and water in a small bowl, then add it to the peach mixture.
  4. Continue to cook for 1 to 2 minutes, stirring constantly, until the mixture thickens.
  5. Remove from heat and stir in the graham cracker crumbs.
  6. Transfer the filling to a bowl and let it cool completely.
