  • 1 large yellow onion, cut into 1/4-inch-thick slices
  • 1/2 teaspoon kosher salt, divided
  • 1 tablespoon vegetable oil
  • 1 pound thinly shaved angus ribeye steak
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon granulated sugar
  • 8 ounces thinly sliced cooper sharp white american cheese
  • 4 amoroso sesame seed sub rolls, split

Instructions

  1. Melt 1 tablespoon of butter in a large skillet over medium-low heat.
  2. Add the sliced onions and 1/4 teaspoon of salt. Cook for 18 to 22 minutes, stirring occasionally, until the onions are soft and golden brown. Transfer the onions to a plate.
  3. Increase the skillet heat to medium-high and add the vegetable oil.
  4. Spread the angus ribeye steak in the skillet and cook for 45 seconds without stirring.
  5. Using two spatulas, chop and flip the steak. Season with garlic powder, onion powder, black pepper, smoked paprika, sugar, and the remaining salt.
  6. Cook the steak for 2 to 3 minutes, until browned but still juicy.
  7. Return the cooked onions to the skillet, toss with the steak, and divide the mixture into 4 equal portions.
  8. Place sliced cheese over each portion. Cover the skillet and cook for 45 to 60 seconds, until the cheese is melted.
  9. Melt the remaining butter on a clean griddle or skillet. Toast the rolls cut-side down until they are lightly golden.
  10. Scoop one portion of the steak, onions, and cheese into each toasted roll.
  11. Serve immediately while hot and creamy, adding extra black pepper or salt if desired.
