- 2 medium zucchini, shredded
- 1 teaspoon salt, divided
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup grated parmesan cheese
- 2 green onions, thinly sliced
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 2 to 3 tablespoons olive oil or avocado oil
- sour cream, for serving
Instructions
- Shred the zucchini using the large holes of a box grater.
- In a bowl, toss the zucchini with 1/2 teaspoon salt and let it sit for 10 minutes.
- Transfer the zucchini to a clean kitchen towel and squeeze out as much liquid as possible.
- In a mixing bowl, combine the drained zucchini with eggs, flour, parmesan, green onions, garlic, remaining salt, pepper, onion powder, and garlic powder. Mix well.
- Heat about 2 tablespoons of oil in a large skillet over medium heat.
- Scoop approximately 1/4 cup of the zucchini mixture into the skillet and gently flatten into a patty.
- Cook for 3 to 4 minutes, until golden brown on the bottom, then flip and cook for another 2 to 3 minutes.
- Transfer to a paper towel-lined plate or wire rack.
- Repeat cooking with the remaining batter, adding more oil as needed. Serve warm with sour cream or your favorite dipping sauce.
