  • Total Time: 1 hour 50 minutes
  • Yield: 2 servings 1x

Ingredients

Scale
  • 2–3 Japanese sweet potatoes (satsumaimo) small sized (approximately .8 lb = 360 grams)
  • 1 teaspoon oil (olive, avocado, or rice bran oil)
  • 1 pinch salt
  • 1 scoop vanilla ice cream
  • 1–2 tablespoon honey
  • 1 pinch black sesame seeds
  • 1 sprig mint

Instructions

  1. Wash and dry the sweet potatoes; leave them whole and unpeeled. Pierce each a few times with a fork.
  2. Place on a baking sheet (no foil) and put into a cold oven. Do not preheat.
  3. Set the oven to 320°F (160°C) and let the oven and potatoes come up to temperature together.
  4. Roast for about 60 minutes for small potatoes, checking with a skewer for doneness.
  5. They're ready when a skewer or thin knife slides very easily into the center.
  6. Remove from the oven and let cool for 10–15 minutes.
