  • 16 oz cherry tomatoes
  • 1 medium shallot, minced
  • kosher salt and pepper to taste
  • 3 medium cloves garlic, minced
  • 1 teaspoon granulated sugar
  • 3/4 cup dry white wine
  • 12 oz pasta, cooked according to package instructions to al dente and 1/2 cup pasta cooking water reserved
  • 1/4 cup firmly-packed torn basil leaves
  • 4 oz burrata or fresh mozzarella cheese, torn into chunks
  • grated parmesan cheese and additional basil for serving

Instructions

  1. Heat a large skillet over medium-high heat and add olive oil, swirling to coat.
  2. Add cherry tomatoes and shallot to the skillet, season with salt and pepper, and toss for 3-5 minutes until tomatoes begin to burst.
  3. Incorporate garlic and sugar, cooking for an additional minute until fragrant.
  4. Pour the white wine into the skillet, using a wooden spoon to scrape up browned bits. Bring the sauce to a simmer, then reduce the heat to medium-low and simmer for 3-5 minutes until the wine is reduced by half, occasionally smashing some tomatoes to release their juices.
  5. Add the cooked pasta and basil to the skillet, warming over medium heat for 1-2 minutes until the pasta is tender, adding reserved pasta water as needed.
  6. Season with salt and pepper to taste, then arrange burrata on top. Finish with grated Parmesan and extra basil before serving.
