  • ⅓ cup sour cream
  • 2 large eggs
  • ½ teaspoon baking soda
  • ½ teaspoon vanilla extract
  • ¾ teaspoon almond extract
  • ½ cup (113g) salted butter, cut into pieces
  • ⅓ cup milk
  • 4 cups (480g) powdered sugar, sifted if lumpy
  • ½ teaspoon EACH vanilla extract and almond extract
  • ¾ cup (100g) chopped roasted salted almonds

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 10x15x1-inch 'jelly roll' pan and set aside.
  2. In a large bowl, mix together flour, sugar, and salt, ensuring accurate flour measurement.
  3. In a medium saucepan, melt butter with water. Bring this mixture to a boil, then reduce heat to simmer for 30 seconds. Pour it over the flour mixture and stir until thick, using a wooden spoon or spatula.
  4. In a separate bowl, whisk together sour cream, eggs, baking soda, vanilla, and almond extract. Combine this mixture with the flour mixture and stir until just combined, being cautious not to overmix.
  5. Spread the batter evenly into the prepared pan. Tap the pan on the countertop to eliminate air bubbles. Bake for 15 to 20 minutes or until a toothpick inserted comes out clean.
