Ingredients

  • 2 cups (360g) masarepa (or areparina)
  • 1 teaspoon (6g) salt
  • 2 tablespoons (28g) unsalted butter, melted
  • 2 cups (480ml) warm water
  • ½ cup (66g) mozzarella cheese (optional)
  • 2 tablespoons (30g) cooking oil

Instructions

  1. In a large bowl, mix the masarepa corn flour and salt until evenly combined. Make a well in the center and add melted butter and warm water.
  2. Stir gradually with a wooden spoon until no dry lumps are left. You can adjust the dough's consistency with more flour or water; it should not stick to the bowl or your fingers. Let the dough rest for about 5 minutes.
  3. Wet your hands and take around 3 tablespoons of the dough; form a ball and flatten it into a ¼-inch thick patty. Smooth out the edges, and if using cheese, create a little well in the dough ball before flattening. Place each patty on greased parchment paper and continue with the remaining dough.
  4. In a skillet over medium-high heat, add a little oil and cook the arepas in batches, flipping once, until golden brown, approximately 5-8 minutes on each side. If needed, transfer to a 350℉ (180℃) oven to finish cooking the inside.
  5. Allow the arepas to cool on a wire rack. Once cooled, split them open and fill with your chosen toppings like shredded chicken, pork, or chicken salad.
