- 2 cups uncooked sushi rice, 400 g
- 2 ½ cups water, 600 mL
- ¼ cup rice vinegar, 60 mL
- 2 Tbsp sugar, 25 g
- 2 tsp salt, 12 g
- 1 Tbsp Furikake rice seasoning, 5 g
- 2 15-oz cans chickpeas, drained; 425 g per can
- ½ cup mayonnaise, can use vegan, 115 g
- ¼ cup sriracha, 60 mL
- ½ cup finely diced red onion, 80 g
- ½ cup finely diced celery, 50 g
- 2 tsp finely chopped capers, 10 g
- 1 Tbsp rice vinegar, 15 mL
- 1 Tbsp soy sauce, use tamari for gluten-free; 15 mL
- Drizzle: Kewpie mayo, sriracha
- To serve: snack-size nori, sliced cucumbers and avocado
Instructions
- Preheat the oven to 350°F (176°C).
- Cook the sushi rice with water according to package instructions. While the rice cooks, warm the rice vinegar in the microwave and stir in sugar and salt until dissolved. Once the rice is done, gently mix in the vinegar mixture and set aside.
- In a large bowl, roughly mash the chickpeas with a potato masher, leaving some larger pieces. Mix in the mayonnaise, sriracha, diced red onion, diced celery, chopped capers, additional rice vinegar, and soy sauce.
- Grease a 9×13-inch casserole dish lightly and press the cooked sushi rice into an even layer. Sprinkle the Furikake seasoning over the rice. Add the chickpea mixture on top and drizzle Kewpie mayo and sriracha in a crisscross fashion.
- Bake in the oven for 20 to 25 minutes, or until the mixture is heated through and the top looks set and slightly dry.
- Serve warm, either on its own or wrapped in nori with slices of cucumber and avocado.
