  • 1 ⅔ cups (235g) all-purpose flour
  • 1 ½ teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 ¼ cups (250g) granulated sugar
  • ½ teaspoon salt
  • 1 large egg, at room temperature
  • 2 large egg whites, at room temperature
  • 6 tablespoon (84g) unsalted butter, melted
  • 3 tablespoon (45ml) sunflower oil
  • ½ cup (120ml) full fat sour cream
  • 1 ½ teaspoon (7ml) pure vanilla extract
  • ⅔ cup (160ml) whole milk, warmed

Instructions

  1. Preheat the oven to 350°F. Line a 13×9-inch metal baking pan with parchment paper, leaving a 2-inch overhang on the long sides for easy removal.
  2. Sift the dry ingredients. Use a fine mesh sieve to sift flour, baking powder, and baking soda into a large bowl. Add sugar and salt, whisking to blend well.
  3. Mix the wet ingredients. In a medium bowl, add egg, egg whites, melted butter, oil, sour cream, and vanilla, whisking until well combined.
  4. Warm the milk. Heat the milk in a microwave for about 1 minute until steaming but not boiling.
  5. Combine the ingredients. Make a well in the center of the dry mixture and pour in the wet mixture. Mix with an electric mixer on medium-low, or use a stand mixer. Gradually add hot milk, mixing until smooth.
  6. Bake the cake. Pour the batter into the prepared pan and tap it on the counter to release air bubbles. Bake for 23-27 minutes, until springy and a skewer comes out clean. Cool for 15 minutes, then transfer to a rack.
  7. Prepare frosting. While the cake cools, prepare your favorite frosting.
  8. Frost the cake. Once cooled, spread or pipe frosting over the top.
