  • 2 cups whole milk
  • 1/2 cup granulated sugar, divided
  • 4 large egg yolks
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract

Instructions

  1. In a medium saucepan, combine the milk and 1/4 cup of sugar. Heat on medium, stirring occasionally until it steams with small bubbles at the edges. Do not boil.
  2. Whisk together the egg yolks, the remaining 1/4 cup of sugar, cornstarch, and salt in a medium bowl until well combined and pale yellow.
  3. Gradually pour about 1/2 cup of the warm milk into the egg mix while whisking continuously. Follow by whisking in another 1/2 cup of hot milk.
  4. Return the tempered egg mixture back to the saucepan with the remaining milk.
  5. Cook on medium-low heat, whisking all the time until the custard thickens and bubbles appear, around 3 to 5 minutes. Keep whisking for 1 more minute.
  6. Take the saucepan off the heat and stir in the butter and vanilla until everything is smooth.
  7. For a silkier consistency, strain the custard using a fine-mesh sieve into a clean bowl.
  8. You can serve it warm, or place plastic wrap directly on the custard surface and refrigerate for at least 2 hours before serving chilled.
