- 3 quarts water
- 3/4 cup maple syrup
- 3/4 cup Kosher salt
- 1 fresh bunch of thyme
- 3 bay leaves
- 2 garlic cloves crushed
- 2 Tbsp. black peppercorns
- 1 large turkey breast 3-4 lbs.
- 1/2 onion chopped
- 1 Tbsp. butter
- 2 slices stale bread or the ends off the loaf
- 1/4 cup dried cranberries
- 1/4 cup pistachios
- 1 tsp. poultry seasoning plus more for the outside
- salt and pepper to taste
- 1/4 cup white wine or chicken broth
- Olive oil
- Twine
Instructions
- Combine water, maple syrup, Kosher salt, thyme, bay leaves, garlic, and black peppercorns in a large stock pot to create the brine. Boil until the salt dissolves, then allow it to cool completely.
- Once the brine is cooled, submerge the turkey in it and refrigerate overnight.
- Remove the turkey from the brine and pat it dry. Sauté the chopped onion in butter until translucent, then let it cool.
- In a bowl, mix the torn bread pieces, cranberries, pistachios, poultry seasoning, salt, pepper, and white wine or broth. Add the cooled onion and blend well.
- Preheat the oven to 400°F. Place the turkey skin-side down on a cutting board, cover with plastic wrap, and flatten it evenly using a kitchen mallet.
- Spread the stuffing along one edge of the turkey and roll it tightly. Secure with twine in 3-4 places and place in a roasting pan. Rub the outside with olive oil and season with poultry seasoning.
- Roast for 1 hour and 30 minutes or until the internal temperature reaches 165°F. Let it rest for 10 minutes before slicing and serving.
