Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 cups diced onion
  • 1 cup button mushrooms, finely chopped
  • 1 cup matchstick carrots, chopped
  • 3 garlic cloves, minced
  • 1 tablespoon herbs de provence
  • 2 tablespoons worcestershire sauce
  • 3 tablespoons tomato paste
  • 3/4 cup rolled oats
  • 2 tablespoons fresh chopped parsley
  • 1 egg, lightly beaten
  • 1 pound ground turkey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ketchup
  • 1/2 cup cider vinegar
  • 2/3 cup brown sugar

Instructions

  1. Preheat the oven to 350°F.
  2. In a small sauté pan, heat olive oil over medium-high heat. Sauté onion for about 2 minutes until softened.
  3. Add mushrooms and cook for another 2 minutes. Then stir in carrots, garlic, and herbs de Provence. Cook for 1 minute more.
  4. Add Worcestershire sauce and tomato paste. Cook 1 minute, then remove from heat and let cool completely.
  5. In a large bowl, combine ground turkey, cooled vegetable mixture, egg, oats, parsley, salt, and pepper gently. Avoid overmixing.
  6. Shape the mixture into a loaf in a baking dish.
  7. Whisk together ketchup, cider vinegar, and brown sugar, and spoon some over the meatloaf, reserving some glaze.
  8. Bake at 350°F and brush the meatloaf with additional glaze as it cooks until it reaches an internal temperature of 165°F.
  9. Once done, remove from the oven, cover loosely with foil, and let rest for 10 minutes before slicing.
  10. Serve with more glaze, if desired.
