- 1 Small Red Onion, finely diced
- 2 Garlic Cloves, minced
- 1 ½ cup Tomato Passata or Crushed Tomatoes
- ¼ cup Heavy Cream, or more if you like it creamier (reduce the broth)
- 9 oz Cheese Tortellini, or any flavor you like
- Vegetable or Chicken Broth, optional, if needed
- Fresh Basil leaves
- Salt & Black Pepper, to taste
- Red Chili Pepper Flakes, optional
- Grated Parmesan, for serving
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the minced onion and cook until soft and translucent, about 5 minutes.
- Stir in the minced garlic and cook until fragrant, about 30 seconds.
- Reduce the heat and add the tomato passata. Add the basil leaves and simmer gently for 10 minutes.
- Stir in the heavy cream and adjust seasoning with salt, pepper, and chili flakes if desired.
- If the soup is too thick, add a bit of broth to reach your preferred consistency.
- Add the tortellini and cook according to package instructions until tender.
- Serve hot with grated Parmesan on top.
