  • 1 Small Red Onion, finely diced
  • 2 Garlic Cloves, minced
  • 1 ½ cup Tomato Passata or Crushed Tomatoes
  • ¼ cup Heavy Cream, or more if you like it creamier (reduce the broth)
  • 9 oz Cheese Tortellini, or any flavor you like
  • Vegetable or Chicken Broth, optional, if needed
  • Fresh Basil leaves
  • Salt & Black Pepper, to taste
  • Red Chili Pepper Flakes, optional
  • Grated Parmesan, for serving

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the minced onion and cook until soft and translucent, about 5 minutes.
  3. Stir in the minced garlic and cook until fragrant, about 30 seconds.
  4. Reduce the heat and add the tomato passata. Add the basil leaves and simmer gently for 10 minutes.
  5. Stir in the heavy cream and adjust seasoning with salt, pepper, and chili flakes if desired.
  6. If the soup is too thick, add a bit of broth to reach your preferred consistency.
  7. Add the tortellini and cook according to package instructions until tender.
  8. Serve hot with grated Parmesan on top.
