Ingredients

  • 1 pound lean ground beef
  • 2 medium carrots thinly sliced
  • 1 red bell pepper thinly sliced
  • â…” cup soy sauce
  • â…“ cup mirin
  • ¼ cup packed brown sugar
  • ¾ teaspoon grated fresh ginger root
  • 2 grated garlic cloves
  • 2 teaspoons corn starch
  • chopped green onion, chives or sesame seeds

Instructions

  1. In a mixing bowl, combine all teriyaki sauce ingredients and whisk until cornstarch is fully dissolved; set aside.
  2. In a large skillet, brown the ground beef over medium-high heat, draining excess fat as needed.
  3. Add the sliced carrots and bell pepper to the skillet, sautéing for about 10 minutes until they start to soften.
  4. Whisk the sauce again and pour it over the meat and veggies; mix well to coat.
  5. Let the mixture simmer uncovered for about 10 minutes until the sauce thickens and becomes glossy. It should coat the back of a spoon when done.
  6. Serve the stir fry over rice or chow mein noodles and garnish with green onions, chives, or sesame seeds.
