Instructions

- In a separate medium bowl, combine granulated sugar, brown sugar, vegetable oil, eggs, and vanilla. Mix in the mashed sweet potato until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the chocolate chips.
- Spoon the batter evenly into the prepared muffin cups and bake for 20 to 25 minutes.
