Ingredients

  • 2 cups sliced fresh strawberries
  • 2 tablespoons granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon kosher salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, cut into cubes
  • 1 large egg
  • 2 teaspoons vanilla bean paste or vanilla extract
  • 1/2 cup milk
  • 1 cup heavy cream
  • 1/4 cup confectioners’ sugar

Instructions

  1. Combine strawberries and 2 tablespoons of sugar in a small bowl. Cover and refrigerate.
  2. Preheat the oven to 400 degrees Fahrenheit.
  3. In an electric mixer bowl, mix flour, sugar, salt, baking powder, and baking soda. Add butter and mix on low speed until crumbly.
  4. In a small bowl, whisk the egg, 1 teaspoon of vanilla, and milk. Add to dry ingredients and stir until moistened.
  5. Turn the dough onto a floured surface, knead lightly, and roll into a 3/4 inch thick circle. Cut out circles with a biscuit cutter, re-rolling as needed.
  6. Place biscuits on a parchment-lined sheet pan and bake for approximately 12-15 minutes until golden. Let cool on a wire rack for 10-15 minutes.
  7. Whip cream, remaining vanilla, and confectioners’ sugar in a bowl with an electric mixer until soft peaks form.
  8. Cut biscuits in half, spoon strawberries and juices onto the bottom half, add whipped cream, and top with the other half of the biscuit.
  9. Serve immediately.
