  • Total Time: 35 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 pound italian mild ground sausage
  • 1/2 onion, chopped
  • 1 (14.5-ounce) can fire-roasted diced tomatoes
  • 2 cups water
  • 1/2 cup half-and-half
  • 1 (8-ounce) package macaroni pasta
  • salt and pepper
  • 2 cups shredded cheddar cheese

Instructions

  1. In a large nonstick pan over medium-high heat, combine the sausage and chopped onion. Cook until the sausage is browned and no longer pink, breaking it up with a wooden spoon.
  2. Stir in the diced tomatoes, water, half-and-half, and macaroni. Cook for 12 to 14 minutes, stirring often, until the pasta is tender.
  3. Season with salt and pepper as needed, remembering the cheese will add extra saltiness.
  4. Add the shredded cheddar cheese on top and stir until it melts and is well combined. Remove the pan from heat.
  5. Allow the dish to sit for a few minutes before serving to let it thicken.
