- 1 pound italian mild ground sausage
- 1/2 onion, chopped
- 1 (14.5-ounce) can fire-roasted diced tomatoes
- 2 cups water
- 1/2 cup half-and-half
- 1 (8-ounce) package macaroni pasta

- 2 cups shredded cheddar cheese
Instructions
- In a large nonstick pan over medium-high heat, combine the sausage and chopped onion. Cook until the sausage is browned and no longer pink, breaking it up with a wooden spoon.
- Stir in the diced tomatoes, water, half-and-half, and macaroni. Cook for 12 to 14 minutes, stirring often, until the pasta is tender.
- Season with salt and pepper as needed, remembering the cheese will add extra saltiness.
- Add the shredded cheddar cheese on top and stir until it melts and is well combined. Remove the pan from heat.
- Allow the dish to sit for a few minutes before serving to let it thicken.
