  • 1 cup light brown sugar packed
  • 2 large eggs
  • 2 teaspoon vanilla extract
  • 1/2 cup vegetable oil
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon ground cinnamon
  • ½ teaspoon allspice
  • 1 cup walnuts chopped, divided (¾ cup for batter + ¼ cup for topping)
  • 30 grams banana chips crushed, about 1/2 cup, for topping

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and line a 9×5-inch (23×13 cm) loaf pan with parchment paper.
  2. In a large bowl, whisk together the brown sugar, mashed bananas, eggs, vanilla extract, and vegetable oil until well combined.
  3. Sift in the all-purpose flour, baking soda, baking powder, cinnamon, and allspice into the same bowl.
  4. Gently stir until just combined without overmixing.
  5. Fold in about ¾ cup (75 g) of the chopped walnuts into the batter.
  6. Pour the batter into the prepared loaf pan and sprinkle the top with the remaining walnuts and crushed banana chips.
  7. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. If browning too quickly, cover loosely with foil during the last 15 minutes.
  8. Let the bread cool in the pan for 15 minutes before transferring it to a wire rack to cool completely before slicing.
