These Squishy Vegan Marshmallows are irresistibly fluffy, flavored with vanilla, and made using aquafaba and agar-agar. This easy homemade treat is perfect for snacking, adding to desserts, or cozying up by the fire with hot cocoa!

  • ½ cup powdered sugar*, 50 g
  • ½ cup cornstarch, 60 g
  • ½ cup aquafaba, 120 ml
  • ¼ tsp cream of tartar, 1.25 ml
  • 1â…› cups granulated sugar, 225 g
  • â…“ cup water, 75 ml
  • 2 tsp vanilla extract
  • ¾ cup water, 175 ml
  • ¼ cup granulated sugar, 54 g
  • 4½ tsp agar-agar powder, 12 g

Instructions

  1. Prepare your 8×8-inch baking dish by lining it with parchment paper.
  2. In a small bowl, whisk the powdered sugar and cornstarch together, then dust the lined baking pan with this mixture and set aside.
  3. In a stand mixer, combine aquafaba and cream of tartar, whisking by hand briefly and then on medium-high speed until soft peaks form (about 5–8 minutes).
  4. In another pan, combine granulated sugar and water over medium heat, stirring until the syrup reaches just above soft ball stage (235–240°F / 113–116°C).
  5. While the mixer runs on low, slowly pour the hot syrup into the aquafaba mixture, then increase the mixer speed to medium-high and whip until thick and glossy, adding vanilla extract in the last minute.
  6. In a small saucepan, combine water, granulated sugar, and agar powder, bringing it to a full boil and whisking for 2–3 minutes until the agar activates.
  7. Immediately pour the boiling agar mixture into the meringue and whip until fully incorporated, starting on low speed and then increasing to medium-high.
  8. Quickly pour the marshmallow mix into the prepared pan and smooth it out. Let set at room temperature for at least 2 hours until firm.
  9. To cut marshmallows, dust with more powdered sugar, turn onto a cutting board, and cut into squares while dusting to prevent sticking.
