Ingredients

  • 1 lb. fresh green beans, trimmed and cut into halves or thirds
  • 2 t soy sauce
  • 1 t rice vinegar (not seasoned)
  • 2 tsp. sweetener of your choice
  • red pepper flakes
  • 1/4 tsp. white pepper (or use black pepper if you don’t have white pepper)
  • 1 t vegetable oil
  • 2 t minced garlic
  • 2 t peeled and minced ginger root

Instructions

  1. Wash the green beans if necessary, trim the ends, and cut them into halves or thirds if they are large.
  2. In a bowl, mix together the soy sauce, rice vinegar, sweetener, red pepper flakes, and white pepper.
  3. Mince garlic to make 2 tablespoons of minced garlic. Peel and mince ginger to make 2 tablespoons of minced ginger.
  4. Heat a large frying pan with a tight-fitting lid over high heat.
  5. Once the pan is hot, add the beans along with 1/4 cup of water, cover, and cook on medium-high heat for 3-5 minutes until the beans are bright green and tender.
  6. Remove the lid and continue cooking until the water has completely evaporated.
  7. Add the oil, minced garlic, and minced ginger to the pan and cook for about 2 minutes, stirring frequently to avoid burning the garlic and ginger.
  8. Pour in the soy sauce mixture, bring it to a boil, and cook for about 2 more minutes until the sauce thickens and coats the beans, leaving them tender-crisp.
  9. Serve the Spicy Szechuan Green Beans hot or at room temperature.
