Ingredients

  • 12 ounces spaghetti
  • Kosher salt
  • 1/2 cup extra virgin olive oil
  • 8 garlic cloves, thinly sliced
  • 1/2 teaspoon red pepper flakes (optional, or more to your liking)
  • 1/3 cup grated parmesan (optional, or more to your liking)
  • chopped parsley (optional, for garnish)

Instructions

  1. Boil a large pot of salted water and cook the spaghetti until just before al dente, reserving 1 1/2 cups of pasta water before draining.
  2. In a large pan over medium heat, warm the olive oil and add the garlic, stirring until it begins to turn golden brown, taking care not to burn it.
  3. If using, add the red pepper flakes to the garlic and olive oil and toss for about 30 seconds, then remove from heat if the pasta is not yet ready.
  4. Once drained, return the pan to medium heat and whisk the reserved pasta water into the oil until simmering and slightly reduced.
  5. Add the cooked spaghetti to the pan, stirring well until coated in the sauce. Turn off the heat and mix in parmesan and parsley if desired.
  6. Let the pasta rest for a few minutes to absorb the flavors before serving, with extra parmesan and red pepper flakes on the side.
