Ingredients

  • 480 g milk
  • 3 eggs large
  • 20 g sugar
  • 120 g sourdough starter discard or active
  • 160 g all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract optional
  • ¼ teaspoon cinnamon optional
  • butter or oil for the pan

Instructions

  1. In a large mixing bowl, combine milk, eggs, sourdough starter, flour, sugar, and salt. Optionally, add vanilla extract and cinnamon for extra flavor. Mix until smooth and thin, adding milk if necessary.
  2. You can let the batter rest for 15-30 minutes, though it’s not required. Start cooking as soon as it's mixed if you prefer.
  3. Heat a nonstick skillet over medium heat and lightly grease with butter or oil.
  4. Pour about ¼-½ cup of batter into the center of the pan and tilt to spread it thinly.
  5. Cook for 45-60 seconds, or until the edges lift and the bottom is lightly golden.
  6. Carefully flip using a thin spatula and cook the other side for an additional 20-30 seconds.
  7. Transfer the finished palatschinken to a plate and continue cooking the remaining batter.
