Sour Cream Noodle Bake is the ultimate comfort food! This dish combines tender egg noodles, savory beef, and creamy cheeses, making it perfect for quick dinners or weeknight meals.

Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 24 ounces marinara sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cottage cheese small curd
  • 1/2 cup sour cream
  • 2 green onions sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces egg noodles
  • 2 cups shredded cheddar cheese
  • 2 cups shredded monterey jack cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. Cook the egg noodles according to the package instructions. Drain and set aside.
  3. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is softened. Drain any excess grease.
  4. Stir in the marinara sauce, 1 teaspoon salt, and 1/2 teaspoon black pepper. Simmer for 5 minutes, then remove from heat.
  5. In a medium bowl, combine the cottage cheese, sour cream, green onions, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir until well mixed.
  6. Add the cooked egg noodles to the cottage cheese mixture and stir to coat.
  7. Spread half of the noodle mixture into the prepared baking dish. Spoon half of the meat sauce over the noodles, then sprinkle on half of the shredded cheddar and monterey Jack cheeses.
  8. Repeat the layers with the remaining noodle mixture, meat sauce, and shredded cheeses, ending with the cheese on top.
  9. Bake uncovered in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  10. Garnish with additional sliced green onions, if desired, and serve hot.
