- 1/4 cup BBQ Dry Rub
- 3 tbsp SPG Rub for added texture and layering
- 1/4 cup Apple Cider Vinegar
- 1/4 cup Water
Instructions
- Preheat your smoker to 275°F and set it for indirect heat. Add your preferred smoking wood.
- On a cutting board, pat the pork belly dry with paper towels and trim away any thick or hard pieces of exterior fat.
- Coat all sides of the pork belly with a thin, even layer of mayonnaise or your chosen binder.
- Generously season the pork belly with BBQ dry rub followed by a layer of SPG seasoning for added flavor and texture.
- Place the pork belly on the grill grates with the fat side facing the heat source. Smoke at 275°F for about 3.5–4 hours.
- Monitor the pork belly for temperature and tenderness to assess doneness.
- Mix apple cider vinegar and water in a spray bottle and spritz the pork belly lightly as needed during cooking.
- Check tenderness as the internal temperature nears 195°F, continuing to smoke until it reaches 200–205°F where a probe slides through with ease.
- Remove the pork belly from the smoker and let it rest for 2 hours before slicing; tent or wrap it if desired.
- Slice into thick pieces resembling brisket and serve warm alongside your favorite BBQ sides or in sandwiches.
