- 1/2 cup girls can grill pastrami brine
- 5 1/4 cups water
- 2 lbs pork belly, cubed
- 1/4 cup girls can grill pastrami rub
- 6 tbsp butter
- 1/4 cup hot mustard
- 2 tbsp honey
Instructions
- Make the brine by combining Girls Can Grill Pastrami Brine with water in a large pot over medium heat until dissolved, then cool.
- In a meat prep bag, add the pork belly and the cooled brine; seal the bag and refrigerate for 6 days, tossing occasionally.
- After brining, rinse the pork belly under cold water to remove excess brine.
- Season the pork belly with Girls Can Grill Pastrami Rub, then place it on a rack over a rimmed sheet pan and refrigerate uncovered for 1 day.
- Preheat your smoker to 225°F with indirect heat. Place the rack with pork belly in the smoker and smoke for 3 hours.
- Transfer the pork belly to an aluminum half pan, add butter, hot mustard, and honey. Cover and braise for 45 minutes.
- Remove the foil and toss the pork belly in the butter, mustard, and honey mixture to coat evenly.
- Finish cooking uncovered for an additional 15 minutes to set the glaze.
