  • 68 lb. beef plate ribs
  • 23 tbsp mayo (as a binder)
  • 2 tbsp kosher salt
  • 2 tbsp black pepper
  • 1 tbsp garlic powder
  • 3/4 cup beef broth
  • 2 tbsp apple cider vinegar
  • melted beef tallow for wrapping

Instructions

  1. Pat the ribs dry with a paper towel, leaving the membrane on the bone side and scoring it a few times to keep the bones together during cooking.
  2. Coat the ribs evenly with a thin layer of mayo on all sides.
  3. Mix the dry rub ingredients (salt, pepper, garlic powder) and season the ribs evenly. Let sit at room temperature for 30-45 minutes.
  4. Preheat your smoker to 265°F, using strong wood like oak and cherry for flavor.
  5. Place the ribs meat side up on the grill grates over indirect heat and insert a thermometer into the thickest part of the meat. Smoke undisturbed for 1 hour.
  6. Mix beef broth with a bit of apple cider vinegar in a spray bottle. Mist the ribs every hour for 3 hours.
  7. When the internal temperature stalls at 175-180°F, remove the ribs and brush with melted beef tallow.
  8. Wrap the ribs tightly in pink butcher paper sprayed with beef broth and return to the smoker bone side down with the thermometer back in.
  9. Continue smoking until the internal temperature reaches 195-206°F and the meat is tender with little resistance.
  10. Rest the ribs wrapped in a cooler or hot box until the temperature drops to 175-180°F, about 2 hours.
  11. Unwrap, slice between the bones into individual ribs, and serve with extra beef tallow and your favorite BBQ sauce.
