Ingredients

  • 30 oz. pinto beans drained and rinsed
  • 30 oz. cannellini beans drained and rinsed
  • 1 small yellow onion diced finely
  • 4 strips bacon
  • 2 tbsp. brown sugar
  • 1 tbsp. black pepper
  • 1 tsp. smoky paprika
  • 2 cups ketchup
  • 1/2 cup maple syrup
  • 1/3 cup brown sugar
  • 3 tbsp. worcestershire sauce
  • 6 tbsp. molasses
  • 4 tbsp. apple cider vinegar
  • 1.5 tsp. cornstarch
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp. garlic powder
  • 1.5 oz. bourbon optional

Instructions

  1. Preheat the smoker to 300°F for indirect heat.
  2. Rinse and drain all the beans, then combine them in a cast iron pan or a disposable aluminum pan.
  3. Finely dice the yellow onion and mix it into the beans.
  4. In a mixing bowl, whisk together all sauce ingredients, adding the bourbon if desired, until there are no lumps from the cornstarch.
  5. Pour the sauce over the beans and gently fold everything together, spreading it evenly in the pan.
  6. In a small bowl, toss the bacon pieces with seasonings to coat.
  7. Dice the bacon into small pieces and spread them evenly over the beans in the pan.
  8. Place the pan on the smoker without cover and smoke for 2 to 3 hours, until the sauce bubbles and thickens, and the bacon becomes crisp.
  9. Serve hot alongside your favorite barbecue dishes.
