- 12 ounces chicken sausage links cut into 1/2 inch wide rounds
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- salt to taste
- Freshly ground black pepper to taste
- Cajun seasoning
Instructions
- Pour olive oil into a large skillet over medium-low heat.
- Introduce the potatoes and allow them to cook for 20 minutes.
- Add the diced onion, cooking until the onions are tender and the potatoes are lightly browned, about 5-10 minutes.
- Stir in the sausage and bell peppers. Cook until the sausage is lightly browned and the vegetables are tender, around 5-7 minutes.
- Lower the heat and mix in the minced garlic. Cook for 1 minute. Season with salt, pepper, and Cajun seasoning to taste.
