- 12 oz shrimp, raw, peeled, deveined
- 1 tbsp olive oil
- 1 tsp girls can grill chicken rub
- 6 hard boiled eggs
- 1/2 cup mayo
- 2 tsp yellow mustard
- 1/4 cup celery, minced
- 1/4 cup shallot, minced
- 1 cup cooked crab meat, real or imitation
- salt and pepper, to taste
- paprika, for garnish
Instructions
- Season the shrimp with olive oil and chicken rub.
- Grill the shrimp over medium-high heat for a few minutes on each side until cooked. Allow to cool before chopping into small pieces.
- In a bowl, halve the hard boiled eggs and remove the yolks.
- Mash the yolks with a fork, then mix in the mayo and yellow mustard until smooth and combined.
- Stir in the minced celery and shallot into the yolk mixture.
- Gently fold in the chopped shrimp (reserve 12 pieces for garnish) and crab meat. Season with salt and pepper to taste.
- Scoop the seafood salad mixture into the halved egg whites.
- Garnish each egg half with a sprinkle of paprika and the reserved shrimp pieces.
