  • ¼ teaspoon ground black pepper
  • ½ teaspoon garlic powder
  • 2 tablespoons breadcrumbs or panko
  • 1 tablespoon lemon juice zest from one lemon is optional
  • 1 tablespoon fresh mint minced

Instructions

  1. Preheat the oven to 400℉.
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, toss the broccoli and cauliflower with olive oil, salt, garlic powder, and black pepper.
  4. Transfer the mixture to the baking sheet and ensure the vegetables are arranged in a single layer. Roast for 15 minutes.
  5. Remove the baking sheet from the oven. Sprinkle the breadcrumbs over the vegetables, making sure to coat the florets evenly. Return the baking sheet to the oven and roast for an additional 5 minutes until golden.
  6. Remove the baking sheet from the oven and toss the florets with the lemon juice and mint. Serve warm as a side dish.
