- 1/4 cup dark molasses
- 1/3 cup sugar
- 1 tablespoon ground cinnamon
Instructions
- Preheat your oven to 350°F and prepare cookie sheets with parchment paper.
- In a large bowl, whisk together the flour, ginger, baking soda, cinnamon, and salt.
- In a stand mixer, cream the butter and sugar until smooth.
- Add the egg and molasses, mixing until well combined.
- Gradually incorporate the flour mixture until just combined.
- Chill the dough in the fridge for one hour.
- In a small bowl, combine the remaining sugar with cinnamon.
- Use a medium cookie scoop to portion out the dough and roll each portion into a ball.
- Coat the balls in the cinnamon sugar mixture and place them two inches apart on the cookie sheets.
- Bake for 10 minutes, or until the edges are lightly browned.
