  • 1 1/2 teaspoons pumpkin pie spice
  • 1 cup granulated sugar
  • 3/4 cup light brown sugar packed
  • 1 cup unsalted butter softened
  • 1 large egg yolk
  • 3/4 cup pumpkin puree (canned or homemade)
  • 2 teaspoon vanilla extract
  • 1/2 cup white sugar
  • 4 teaspoons cinnamon

Instructions

  1. In a medium bowl, whisk together flour, pumpkin pie spice, cinnamon, baking soda, baking powder, cornstarch, cream of tartar, and salt. Set aside.
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until smooth. Mix in the egg yolk and vanilla extract, followed by the pumpkin puree.
  3. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Refrigerate the dough for 30-40 minutes until firm enough to handle.
  4. Preheat the oven to 350°F. Prepare two baking sheets with spray or lining.
  5. Scoop cookie dough onto the sheets, leaving 2 inches between each dough ball.
  6. In a small bowl, mix the white sugar and cinnamon. Roll each dough ball in this mixture before placing them on the baking sheets.
  7. Bake for 10-13 minutes or until set. Refrigerate remaining dough while the first batch is baking. Let cookies cool on the baking sheet for 5-10 minutes before transferring to a wire rack.
