Ingredients

  • 2 pork tenderloins
  • 1 can green beans, drained
  • 1 can sliced carrots, drained
  • 3–4 medium potatoes, diced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon italian seasoning
  • salt and black pepper, to taste
  • your favorite pork seasoning, to taste

Instructions

  1. Preheat the oven to 350°F. Line a large rimmed sheet pan with parchment paper or foil, if desired.
  2. Place both pork tenderloins in the center of the sheet pan. Season generously with salt, pepper, and your favorite pork seasoning.
  3. Drain the green beans and carrots well. Arrange each vegetable in its own section of the sheet pan.
  4. Toss the diced potatoes with olive oil, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Arrange them on the remaining section of the pan.
  5. Bake for about 30 minutes, or until the thickest part of the pork tenderloin reaches 145°F.
  6. If the pork is finished before the potatoes are fork-tender, remove the pork and loosely cover it with foil. Return the sheet pan to the oven and continue cooking the potatoes as needed.
  7. Allow the pork tenderloin to rest for 5–10 minutes before slicing.
  8. Serve the sliced pork with the seasoned potatoes, green beans, and carrots.
