- 2 pork tenderloins
- 1 can green beans, drained
- 1 can sliced carrots, drained
- 3–4 medium potatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon italian seasoning
- salt and black pepper, to taste
- your favorite pork seasoning, to taste
Instructions
- Preheat the oven to 350°F. Line a large rimmed sheet pan with parchment paper or foil, if desired.
- Place both pork tenderloins in the center of the sheet pan. Season generously with salt, pepper, and your favorite pork seasoning.
- Drain the green beans and carrots well. Arrange each vegetable in its own section of the sheet pan.
- Toss the diced potatoes with olive oil, garlic powder, onion powder, paprika, Italian seasoning, salt, and pepper. Arrange them on the remaining section of the pan.
- Bake for about 30 minutes, or until the thickest part of the pork tenderloin reaches 145°F.
- If the pork is finished before the potatoes are fork-tender, remove the pork and loosely cover it with foil. Return the sheet pan to the oven and continue cooking the potatoes as needed.
- Allow the pork tenderloin to rest for 5–10 minutes before slicing.
- Serve the sliced pork with the seasoned potatoes, green beans, and carrots.
