Ingredients

  • 1 whole chicken (about 4 pounds)
  • 10 cups water
  • 1 onion quartered
  • 2 celery stalks roughly chopped
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 3/4 cup whole milk
  • 2 tablespoons melted butter

Instructions

  1. Place chicken, water, onion, celery, salt, and pepper in a large pot.
  2. Over medium high heat, bring to a boil. Reduce heat and simmer until chicken is very tender, about 1 hour.
  3. Remove chicken from pot and discard skin and bones.
  4. Shred the meat and return it to the pot. Bring broth back to a gentle simmer.
  5. In a bowl, combine flour, baking powder, and salt.
  6. Stir in milk and melted butter until a soft dough forms.
  7. Drop dumpling dough by spoonfuls into simmering broth.
  8. Cover and cook without stirring until dumplings are cooked through, about 15 – 20 minutes.
  9. Stir gently once before serving.
  10. Serve hot in bowls.
