- 1 whole chicken (about 4 pounds)
- 10 cups water
- 1 onion quartered
- 2 celery stalks roughly chopped
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3/4 cup whole milk
- 2 tablespoons melted butter
Instructions
- Place chicken, water, onion, celery, salt, and pepper in a large pot.
- Over medium high heat, bring to a boil. Reduce heat and simmer until chicken is very tender, about 1 hour.
- Remove chicken from pot and discard skin and bones.
- Shred the meat and return it to the pot. Bring broth back to a gentle simmer.
- In a bowl, combine flour, baking powder, and salt.
- Stir in milk and melted butter until a soft dough forms.
- Drop dumpling dough by spoonfuls into simmering broth.
- Cover and cook without stirring until dumplings are cooked through, about 15 – 20 minutes.
- Stir gently once before serving.
- Serve hot in bowls.
