- 1 ½ cups all-purpose flour
- ½ cup finely ground almonds or almond flour
- 1 ½ teaspoons baking powder
- 1 teaspoon ground cinnamon
- ¼ teaspoon nutmeg

- ½ cup butter softened, plus more for buttering pan
- 1 cup granulated sugar plus optional 2 tablespoons for topping
- 2 teaspoons almond extract
- 1 teaspoon vanilla extract
- 1 large egg room temperature
- ½ cup milk or greek yogurt
- 1 pound plums pitted and sliced
- 2 to 3 tablespoons apricot jam warmed
- 2 to 3 tablespoons sliced almonds for topping
Instructions
- Preheat the oven to 350℉ (175℃) and set a rack in the center. Butter or grease a 9-inch springform pan, optionally lining it with parchment.
- In a grinder or food processor, pulse the almonds finely. In a bowl, mix the flour, almond meal, baking powder, spices, and salt.
- Cream the butter and sugar together until fluffy, then incorporate the egg, vanilla, and almond extract on low speed.
- Gradually add the flour mixture and milk, mixing until smooth. The batter will be thick.
- Pour the batter into the pan, smoothing the top. Arrange plums on top, sprinkle with remaining sugar.
- Bake for 60 to 70 minutes until golden and springy. Tent with parchment if browning too fast.
- Once baked, cool slightly, brush with warm jam, and sprinkle with almonds. Let cool completely before slicing.
