  • ½ teaspoon salt
  • ½ cup butter softened, plus more for buttering pan
  • 1 cup granulated sugar plus optional 2 tablespoons for topping
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1 large egg room temperature
  • ½ cup milk or greek yogurt
  • 1 pound plums pitted and sliced
  • 2 to 3 tablespoons apricot jam warmed
  • 2 to 3 tablespoons sliced almonds for topping

Instructions

  1. Preheat the oven to 350℉ (175℃) and set a rack in the center. Butter or grease a 9-inch springform pan, optionally lining it with parchment.
  2. In a grinder or food processor, pulse the almonds finely. In a bowl, mix the flour, almond meal, baking powder, spices, and salt.
  3. Cream the butter and sugar together until fluffy, then incorporate the egg, vanilla, and almond extract on low speed.
  4. Gradually add the flour mixture and milk, mixing until smooth. The batter will be thick.
  5. Pour the batter into the pan, smoothing the top. Arrange plums on top, sprinkle with remaining sugar.
  6. Bake for 60 to 70 minutes until golden and springy. Tent with parchment if browning too fast.
  7. Once baked, cool slightly, brush with warm jam, and sprinkle with almonds. Let cool completely before slicing.
