- 1 cup unsalted butter room temperature
- 2 cups granulated sugar
- 6 large eggs
- 2 tsp baking powder
- ½ tsp salt
- 3¼ cups all-purpose flour
- 1 cup heavy whipping cream
- 2 tsp vanilla extract
- 1 cup canned crushed pineapple drained
- confectioner’s sugar for topping
Instructions
- Preheat your oven to 300°F.
- Grease and flour a 12-cup Bundt cake pan or use nonstick cooking spray; set aside.
- In a stand mixer, cream together the butter and sugar until light and fluffy, about 3-4 minutes on medium speed.
- Add the eggs two at a time, mixing well after each addition.
- In a large mixing bowl, combine the baking powder, salt, and flour. Gradually add half of this mixture to the batter and mix until well combined.
- Add the heavy whipping cream and vanilla extract; continue mixing until thoroughly combined.
- Incorporate the remaining flour mixture and mix until the batter is smooth and even.
- Scrape the sides and bottom of the bowl to ensure everything is well mixed.
- Gently fold in the drained crushed pineapple into the batter.
- Transfer the batter into the prepared Bundt pan and bake for 90-95 minutes or until a toothpick inserted comes out mostly clean.
- Allow the cake to cool in the pan for 15 minutes, then invert onto a wire rack and let cool completely before slicing.
- Optional: Dust the top of the cake with powdered sugar before serving.
