  • 4 cups fresh pineapple, peeled, cored, and finely chopped
  • 1 tablespoon lemon juice
  • 1 (1.75-ounce) box powdered fruit pectin
  • 5 cups granulated sugar

Instructions

  1. Peel and core the fresh pineapple, then cut it into chunks.
  2. Add the pineapple to a food processor or blender and pulse until very finely chopped, ensuring not to completely puree it into juice.
  3. Measure 4 cups of prepared pineapple and place it in a large, heavy-bottomed saucepan.
  4. Add the lemon juice and powdered pectin. Stir until well combined.
  5. Place the saucepan over medium-high heat and bring the mixture to a full rolling boil, stirring frequently to prevent scorching.
  6. Once boiling, add all 5 cups of sugar at once and stir continuously until the sugar is completely dissolved.
  7. Bring the mixture back to a full rolling boil that cannot be stirred down.
  8. Boil hard for 1 minute, stirring constantly, or follow the boiling time suggested by your pectin brand.
  9. Remove the saucepan from heat and skim off any surface foam with a spoon if it has formed.
  10. Ladle the hot pineapple jelly into clean, prepared jars, leaving space at the top.
  11. Allow the jars to cool, letting the jelly thicken as it cools, which may take 24–48 hours.
  12. Store in the refrigerator unless processing using a tested water-bath canning method.
