- 3/4 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/2 tsp kosher salt
- 2 20 oz cans of pineapple (sliced or in chunks)
- 1/2 cup pineapple juice (reserved from cans)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup shredded cheddar cheese
- 1 sleeve (about 30) buttery crackers (ritz) (crushed)
- 6 tbsp unsalted butter (melted)
Instructions
- Preheat the oven to 350°F and grease a 9×9-inch baking dish.
- In a large bowl, whisk together the sugar, flour, and salt. Incorporate the drained pineapple (chop it if using slices) and the reserved ½ cup of juice. Gently fold in both types of cheddar cheese.
- Transfer the pineapple mixture into the prepared baking dish.
- Mix the crushed crackers with the melted butter and ½ cup of sharp shredded cheddar cheese until well coated.
- Spread the cracker mixture on top of the casserole.
- Bake for 30 to 35 minutes, or until the edges are bubbly and the topping is golden brown.
- Allow it to cool for 10 minutes before serving, as the casserole thickens upon standing.
