  • 3/4 cup granulated sugar
  • 1/3 cup all-purpose flour
  • 1/2 tsp kosher salt
  • 2 20 oz cans of pineapple (sliced or in chunks)
  • 1/2 cup pineapple juice (reserved from cans)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup shredded cheddar cheese
  • 1 sleeve (about 30) buttery crackers (ritz) (crushed)
  • 6 tbsp unsalted butter (melted)

Instructions

  1. Preheat the oven to 350°F and grease a 9×9-inch baking dish.
  2. In a large bowl, whisk together the sugar, flour, and salt. Incorporate the drained pineapple (chop it if using slices) and the reserved ½ cup of juice. Gently fold in both types of cheddar cheese.
  3. Transfer the pineapple mixture into the prepared baking dish.
  4. Mix the crushed crackers with the melted butter and ½ cup of sharp shredded cheddar cheese until well coated.
  5. Spread the cracker mixture on top of the casserole.
  6. Bake for 30 to 35 minutes, or until the edges are bubbly and the topping is golden brown.
  7. Allow it to cool for 10 minutes before serving, as the casserole thickens upon standing.
