- 1 pound chicken breasts boneless and skinless
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ Tablespoon onion powder
- 1 pint grape tomatoes or cherry tomatoes, rinsed and dried
- 5 Tablespoon olive oil
- 3 teaspoons garlic minced
- ½ teaspoon salt divided
- ½ teaspoon ground black pepper
- ½ cup basil pesto
- ½ cup whipping cream
- ¼ cup grated parmesan cheese
- Optional: garnish with fresh julienned basil leaves
Instructions
- Preheat the oven to 400 degrees.
- Place the tomatoes on a baking sheet. Drizzle with 2 Tablespoons of olive oil, and sprinkle with ¼ teaspoon salt and ¼ teaspoon pepper. Toss to coat the tomatoes evenly.
- Roast the tomatoes in a preheated oven for 15-20 minutes until the skins blister and char slightly. Remove and set aside.
- Prepare the chicken by patting it dry. If they are thick, slice them in half lengthwise for quicker cooking.
- Mix garlic powder, onion powder, paprika, remaining salt, and pepper in a small bowl.
- Sprinkle the spice mixture over both sides of each chicken breast.
- Heat a heavy skillet on medium/high. Add the remaining 2 Tablespoons of olive oil to coat the bottom.
- Cook the chicken breasts in the skillet for about 5 minutes per side or until they reach an internal temperature of 165 degrees with a thermometer. Remove from pan and set aside.
- Lower the heat to medium and add 1 Tablespoon of oil and minced garlic to the pan. Cook for 30 seconds until fragrant.
- Add pesto, whipping cream, and parmesan to the pan. Stir gently and bring to a low simmer.
- Gently scrape any browned bits from the bottom of the pan with a spoon during simmering.
- Reduce heat to medium/low and return chicken to the pan, adding roasted tomatoes around the chicken. Heat until warmed through.
- Serve immediately.
