Ingredients

  • 6 1/2 oz egg whites (about 5 large eggs) at room temperature
  • 10 oz caster sugar
  • 1 tsp cream of tartar
  • 1 tbsp cornstarch
  • 1 tsp white vinegar
  • 1/2 cup heavy cream cold
  • 1/2 cup Greek Yogurt
  • 2 tbsp powdered sugar
  • 1 1/2 cups strawberries sliced
  • 3/4 cup blueberries
  • 1 kiwi fruit
  • A few fresh mint leaves

Instructions

  1. Preheat the oven to 245°F and draw a 6- to 7-inch circle on parchment paper, setting it aside.
  2. Beat the egg whites in a stand mixer on low-medium speed until soft peaks form, about 5 minutes. Gradually add the cream of tartar.
  3. Increase speed to medium-high; add sugar one tablespoon at a time, whisking until the meringue is thick and glossy, holding stiff peaks. Ensure it feels smooth between fingers.
  4. Lower the speed, sift in cornstarch, add vinegar, and whisk briefly to combine without overmixing.
  5. Flip parchment paper over and press it onto a baking sheet. Spoon meringue into the circle, shaping it and creating a well in the center.
  6. Use a spatula to create ridges around the outer edge and smooth the top.
  7. Bake for 1½ hours, then lower heat to 210°F and bake for an additional 30-45 minutes. Check if it lifts cleanly from parchment; if not, continue baking, checking every 10 minutes.
  8. Turn off the oven and leave the Pavlova inside for at least 2 hours without opening the door.
  9. Whip the cream with powdered sugar until soft-to-stiff peaks form; fold in Greek yogurt. Transfer Pavlova to serving plate, cover with cream, and add fruits and mint to serve.
