  • 1½ pounds (680g) medium-thick asparagus spears, washed, dried, and woody ends removed
  • 12 tablespoons (15-30ml) olive oil
  • salt and pepper to taste (½-¾ teaspoon is a good start)
  • ½ cup (40g) freshly grated Parmesan cheese
  • 23 tablespoons (30-45g) melted butter (or olive oil)
  • 3 cloves garlic, minced
  • ¾ cup (100g) panko breadcrumbs
  • 1 teaspoon (3g) Italian seasoning
  • 1 teaspoon (5ml) lemon juice
  • 12 tablespoons (4-8g) chopped fresh parsley (optional)

Instructions

  1. Preheat the oven to 400℉ (205℃) and lightly spray a baking sheet with oil.
  2. Trim the woody ends off the asparagus spears, arrange them on a parchment-lined baking sheet, and drizzle with olive oil. Season with salt and pepper to taste.
  3. In a medium bowl, combine the Parmesan cheese, melted butter (or olive oil), minced garlic, panko breadcrumbs, Italian seasoning, and lemon juice.
  4. Spread the breadcrumb mixture over the asparagus and bake for about 10 minutes until tender.
  5. Broil for 2 minutes until the breadcrumbs are golden brown, keeping a close watch to prevent burning. Garnish with parsley and additional Parmesan if desired.
  6. Serve hot alongside your favorite main course.
