  • 1 pound mild italian sausage links
  • 1 tablespoon olive oil
  • 1/2 large red bell pepper sliced
  • 1/2 large yellow bell pepper sliced
  • 1/2 large green bell pepper sliced
  • 2 tablespoons unsalted butter
  • 3 garlic cloves finely minced
  • 1 to 2 tablespoons calabrian chile paste to taste
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated parmesan cheese
  • 1/4 cup freshly grated romano cheese
  • 1/2 teaspoon kosher salt or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup shredded italian cheese blend
  • 2 tablespoons freshly grated parmesan cheese

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook rigatoni until just al dente according to package directions.
  3. Reserve 1 cup pasta water.
  4. Drain pasta and set aside.
  5. Heat olive oil in a large skillet over medium heat.
  6. Add sausage links and cook, turning occasionally, until browned and cooked through.
  7. Transfer sausage to a cutting board and let rest for 5 minutes before slicing into 1/2-inch rounds.
  8. Add bell peppers to the same skillet and cook for 4 to 5 minutes, stirring occasionally, until lightly browned but still crisp.
  9. Transfer the peppers to the plate with the sausage.
  10. Reduce heat to medium-low and add butter to the skillet.
  11. Add garlic and cook for about 30 seconds until fragrant.
  12. Stir in Calabrian chile paste and cook for another 30 seconds.
  13. Add heavy cream and chicken broth, bringing to a gentle simmer.
  14. Cook for 3 to 4 minutes, stirring occasionally, until slightly thickened.
  15. Reduce heat to low and stir in Parmesan and Romano until melted and smooth.
  16. Season with salt and black pepper.
  17. Add rigatoni, sausage, and peppers to the sauce, tossing gently until everything is well coated and heated through.
  18. Add a splash of reserved pasta water if the sauce becomes too thick.
  19. Divide among serving bowls and top with Italian cheese blend and additional Parmesan.
  20. Serve immediately.
