- ¾ cup unsalted butter room temperature
- ¾ cup light brown sugar
- ¼ cup granulated sugar
- 2 tsp vanilla extract
- 1 large egg
- 1 cup all-purpose flour
- 1 tsp ground cinnamon
- ¾ tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 2 cups old-fashioned oats plus more for topping
- 1 cup raisins
- ⅔ cup confectioner’s sugar
- 1 Tbsp milk
Instructions
- Preheat your oven to 350°F.
- In a mixing bowl, cream together the unsalted butter, light brown sugar, and granulated sugar until the mixture is light and fluffy, about 3-4 minutes on medium speed.
- Add the vanilla extract and the large egg to the butter mixture, mixing until fully combined.
- In a separate large bowl, whisk together the all-purpose flour, ground cinnamon, baking powder, baking soda, and salt until well mixed.
- Incorporate half of the flour mixture into the butter mixture, stirring until well combined.
- Add the remaining flour mixture and mix until everything is thoroughly combined.
- Stir in the old-fashioned oats and raisins until evenly incorporated.
- Press the batter evenly into a 10-inch cast-iron skillet and sprinkle additional oats on top.
- Bake in the preheated oven for 25-30 minutes, or until the bars are fully cooked and lightly golden brown on top.
- Allow the bars to cool in the pan before adding the glaze.
