Ingredients

  • ½ cup unsweetened shredded coconut
  • ½ cup sugar-free chocolate chips, divided
  • ⅓ cup pecans, chopped
  • ⅓ cup walnuts, chopped
  • ⅓ cup almonds, chopped
  • ⅓ cup almond butter
  • ⅓ cup sugar-free honey (or honey)
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup monk fruit/allulose, powdered
  • 2 tablespoons ground golden flaxseed
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon ground nutmeg

Instructions

  1. Preheat oven to 350°F.
  2. Place chopped pecans, walnuts, almonds, and sunflower seeds on a lined baking sheet. Bake for 8 minutes until fragrant and starting to brown.
  3. Combine the toasted nuts and seeds in a large bowl with shredded coconut, pumpkin seeds, sweetener, golden flaxseed, cinnamon, nutmeg, and salt.
  4. Stir until mixed, then fold in most of the chocolate chips, saving some for later.
  5. Prepare an 8” x 8” baking dish lined with parchment paper.
  6. Heat almond butter and honey in a microwave-safe bowl for 1 minute, then stir.
  7. Pour the almond butter mixture over the nut mixture and stir to combine quickly.
  8. Spread the mixture into the baking dish and press down evenly. Top with reserved chocolate chips.
  9. If the mixture cools too quickly and is hard to mix, microwave for 30 seconds at a time as needed.
  10. Chill in the refrigerator for 1-2 hours until set, then cut into 8 bars.
