- 4 scallions (white and green parts)
- 2 bell peppers (red, yellow or orange)
- 1/2 cup pitted Kalamata olives, drained
- 1 English cucumber
- 1/2 cup crumbled feta cheese
Instructions
- Rinse quinoa under cold water. Cook according to package instructions until tender.
- In a serving bowl, combine lemon juice and zest, oregano, salt, and pepper. Whisk in olive oil and adjust seasoning as desired.
- Once quinoa is cooked, transfer it to the bowl with the dressing and stir to coat. Let cool completely.
- Chop vegetables while quinoa cools. Add scallions, chopped peppers, sliced olives, and cucumber to the quinoa.
- Finish by adding crumbled feta cheese. Optional: garnish with fresh oregano leaves before serving.
