Ingredients

  • 3 tablespoons extra virgin olive oil
  • ½ medium yellow onion finely diced (about ½ cup)
  • 4 garlic cloves minced
  • 2 teaspoons italian seasoning
  • 28 ounces crushed tomatoes
  • 23 tablespoons tomato paste see notes
  • salt, to taste
  • freshly ground black pepper, to taste
  • chopped fresh parsley

Instructions

  1. Heat the olive oil over medium heat in a small Dutch oven or heavy pot.
  2. Add the onion and cook for 3-4 minutes or until soft.
  3. Reduce the heat to low. Add the garlic and Italian seasoning, cooking for 1 minute while stirring constantly.
  4. Stir in the crushed tomatoes and tomato paste, and simmer over low heat for 15-20 minutes.
  5. Season with salt and freshly ground black pepper to taste.
  6. Sprinkle with chopped fresh parsley, basil, or thyme before serving.
