  • 6 eggs separated, room temperature
  • 1 teaspoon white vinegar
  • 4 ounces nonfat greek yogurt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dried egg whites or see above for swaps
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tsp vanilla liquid stevia optional
  • 1/2 cup monk fruit allulose brown sweetener
  • 1 tsp ground cinnamon
  • 12 tbsp water
  • 1/2 cup plain nonfat greek yogurt
  • 2 tbsp zero sugar honey

Instructions

  1. Preheat the oven to 325°F and line a 9 by 13 baking dish with parchment paper or lightly grease it.
  2. In a stand mixer, whip the egg whites with vinegar until stiff peaks form, about 10-15 minutes. Set aside.
  3. In a blender, combine the egg yolks with wet ingredients and the remaining dry ingredients; blend until smooth and well mixed.
  4. Gently fold the whipped egg whites into the egg yolk mixture in small batches, being careful not to deflate them.
  5. Pour the pancake batter into the prepared baking dish.
  6. In a separate bowl, mix the brown sweetener and cinnamon, adding just enough water to create a thick, spoonable mixture. Drizzle it over the pancake batter and lightly swirl it in.
  7. Bake in the preheated oven for 25-28 minutes, until a toothpick comes out clean from the center. If desired, prepare icing and spread it over the pancakes once baked.
  8. Store any leftovers in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Reheat as needed.
