Ingredients

  • 12 eggs
  • 1/3 cup sour cream
  • 1/4 cup ground flaxseed
  • 1/2 teaspoon sea salt
  • 1 teaspoon baking powder
  • 1/3 cup coconut flour
  • 1 cup whey protein powder
  • 1 cup shredded cheddar
  • 1 teaspoon italian seasonings
  • 1 teaspoon garlic powder
  • 8 ounces sweet italian sausage casings removed, cooked, crumbled

Instructions

  1. Preheat your oven to 350 degrees F.
  2. In a stand mixer, blend the eggs and sour cream until mixed thoroughly.
  3. In a bowl, whisk together the ground flaxseed, sea salt, baking powder, coconut flour, and whey protein powder.
  4. Gradually add the dry ingredient mix into the wet mixture in the stand mixer.
  5. In a small bowl, combine cheddar cheese, Italian seasonings, and garlic powder.
  6. Mix half of this cheese and seasoning blend into the batter in the mixer.
  7. Grease two donut pans using olive oil cooking spray.
  8. Distribute the batter evenly into the donut pans.
  9. Add half of the cooked sausage crumbles into the batter of each bagel.
  10. Sprinkle the remaining sausage crumbles over the top of each bagel.
  11. Bake for 20 minutes.
  12. Take the bagels out of the oven and distribute the remaining shredded cheese on top of each.
  13. Return to the oven and bake for an additional 5 minutes.
  14. Let the bagels cool slightly. Use a knife to loosen them around the edges and in the center.
  15. Enjoy the bagels warm, or refrigerate and reheat in the microwave for 30 seconds to a minute.
